The shoe sizing follows multiple scales – there is US system, UK System and there is EURO system amongst many others. But irrespective of any system – most brands do not make shoes in half sizes. For instance, one can get size 7 or size 8 but one will find it difficult to get a shoe for size 7.5

What changes with the variation in size? Only length changes or other features change too.

When a shoe size changes [for example from 7 to 8] then everything about the shoe changes – in other words – its not only length or width – even a small leather component in the shoe upper will proportionally change. Although the difference is only about 1/3rd of CM in length, it's an overall change so it can accommodate more volume.

Is it possible to convert a full-size shoe to fit like a half size?

Yes, this is possible by inserting an extra cushioned layer on the inside of the shoe. Due to the thickness of the cushion, the size is altered to half-lower size. Therefore, size 8 becomes 7.5. There are brands which do half sizes where technically all the components of the shoe will change. It is the right way but for all practical purposes the extra cushion is a good way to resolve the half size issue, in case your preferred brand does not do half size.
